Recipe: Ultimate Birthday Cake

A staple for any bakers repertoire. This yummy cake with hints of vanilla, almond, and lemon, loaded with colorful sprinkles and smothered with vanilla buttercream is sure to hit the spot.

Birthday Cake Recipe

Ingredients:

  • 1 cup of white sugar
  • 1 1/2 cups of AP (All Purpose) flour (sifted)
  • 1 14 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup unsalted butter (very soft)
  • 1/2 cup sour cream
  • 2/3 cup milk
  • 2 large eggs plus 1 egg yolk
  • 1 tsp vanilla bean paste
  • 1 tsp almond extract
  • 1/2 tsp lemon extract

Method:

  1. Preheat the oven to 350°F. Lightly grease three (6-inch pans).
  2. In a large mixing bowl, whisk together the sugar, flour, baking powder, and salt.
  3. Add the butter and beat with an electric mixer at low speed, until the mixture looks sandy (3-4 minutes).
  4. Combine the milk, sour cream, and vanilla, lemon, almond extracts and add, all at once. Mix at low speed for 30 seconds, then increase the speed to medium and beat for 30 seconds.
  5. Scrape the bottom and sides of the mixing bowl.
  6. With the mixer running at low speed, add 1 egg. Increase the speed to medium and beat for 30 seconds.
  7. Repeat this procedure with the second egg. Continue adding the eggs, scraping after each addition, until all 3 are added.
  8. After the last egg is added, scrape the bowl once more, then beat at medium-high speed for 30 more seconds.
  9. Split the batter into three small bowls, add pink coloring to one, blue to another, and 2 tbs of sprinkles to the third.
  10. Transfer the batter to the cake pans and tap to release bubbles. Smooth the tops and place on the top shelf of the oven for 25-30 minutes.
  11. The cake is done when it’s golden brown around the edges and just beginning to pull away from the edge of the pan. A toothpick inserted in the center will come out clean.
  12. Remove the cake from the oven and allow it to cool for 5 minutes, then turn it out onto a rack to cool completely.
  13. Trim the tops and layer with your favorite vanilla buttercream.
