“Baking is chemistry, and if the reactions are not correct within a baked good, then the result can be an unpleasant and inedible dish”, says Chef Charity George. “Ten years ago, I was thrown, head first into the “free baking” arena, when my daughter developed allergic reactions to multiple food categories, this led me to experiment with vegan baking and I developed recipes for vegan chocolate cake, vegan white cake, vegan chocolate frosting, and a vegan buttercream.” Chef George shares her incredible vegan creations and even includes some options for gluten-free variations.
