Recipe of the Day: Outrageous Peanut Butter and Fluff Brownies

My hubby is a New-England’er and I am British. When we first started dating, we really enjoyed sharing our favorite, local and regional recipes with each. However, I was still pretty darn surprised one day he offered me a peanut butter and marshmallow fluff sandwich. “What’s this? ” I questioned, poking cautiously at the sandwich. “Just try it,” he insisted, and there began my love affair with this sinfully-simple, New-England staple. It’s no surprise then, that years later, our two children love these sandwiches as their “special treat”. I love baking with my two kidlet’s, and their favorite things to make and eat are brownies, so I’ve incorporated PB&F into my brownie recipe at their request.

Ingredients

  • 1/2 stick of unsalted butter at room temperature
  • 2 cups of AP flour
  • 1 1/2 cups of granulated sugar
  • 3/4 cup of Hershey Cocoa Powder
  • 1 tsp vanilla extract
  • 1/3 cup of peanut butter
  • 1/3 cup of marshmallow fluff
  • 4 oz of dark chocolate (chopped)
  • 1 cup of whole milk
  • 1 medium egg and 1 extra egg yolk

Method

Prepare an 8 inch square pan (butter and flour)

In a large mixing bowl, combine the butter, sugar and vanilla extract and mix at medium speed until pale and fluffy (2 minutes).

Add the egg and egg yolk and continue to mix for another minute until fully incorporated.

In a separate bowl sift together the cocoa powder and flour.

Add half the dry ingredients to the wet ingredients, mixing at slow speed to incorporate.

Add the milk, and mix, and then add the remaining half of the dry ingredients, mixing until incorporated. Finally beat the mixture by mixing at high speed for 30 seconds.

Add the chopped chocolate and fold in with a spatula.

Pour the mixture into your prepared pan

Spoon small blobs of the peanut butter and fluff over the top and then using the back of a fork swirl them into the chocolate brownie mixture.

Bake in a 325 degree preheated over for 20-25 minutes. The brownies should be set on the outside and still a touch gooey in the center. Allow to fully cool before slicing and serving.
