Nutella Dream Cake

I have a serious problem! I’m addicted to Nutella! I could devour an entire jar, straight from the jar with a spoon! So when I was strolling through my local grocery store this week and saw Nutella on BOGO (buy one get one free), I couldn’t help but snaffle up a few jars. Inspired by my now chocolate-hazelnut stocked pantry, I set about creating an indulgent ‘just for me’ treat of a cake. I’ve earned it, it’s been a rough year of cake making. In fact I don’t just want a Nutella cake, I need it, it would be a crime NOT to make myself a Nutella cake! It may even be a crime for YOU not to make a Nutella cake too! Nutella cake for everyone- I insist!

For the cake

1/2 cup of Nutella

Box of Duncan Hynes Chocolate Fudge Cake Mix

3 large eggs

1 cup of freshly brewed hot coffee

1/4 cup of vegetable oil

Combine the wet ingredients (except for the hot coffee) into a large clean bowl and whisk to combine, add the box of cake mix and mix on medium/low speed until combined. Pour in the searing hot coffee in a slow stream with the whisk attachment turning on a slow speed. Once incorporated beat for 30 seconds at medium/high speed.

Pour the batter into 2 8 inch cake pans or 3 6 inch cake pans and bake for 20 minutes

For the Nutella Ganache

1 cup of Nutella

1 pt Heavy Cream

2lb chocolate chips (semi-sweet)

2Tbs hazelnut syrup

 

Bring the cream to a scald on the stove and pour over the chocolate chips. Gently shake the bowl to submerge the chips under the cream and allow to sit for 2 -3 minutes. Slowly stir the chips until melted- if the chips are not fully melted, microwave for 30-second bursts and stir. Once smooth allow the ganache to fully cool at room temperature. Once cooled add the Nutella and syrup and whip at medium speed for 1-2 minutes until light and fluffy!

 

To assemble

Torte the cake and layer, alternate the layers with the Nutella Ganache – it’s quite rich so you don’t need a thick layer! Cover the exterior of the cake with a layer of the Nutella Ganache. Chill until firm and then pour a little melted (but cooled) chocolate over the top to create a drizzle. I added a little Nutella whipped cream to the top of the cake and then added some Forerro Rochet chocolates for good measure!!
