Recipe: Light-as-a-Feather Whipped Chocolate Frosting

One of my biggest issues with home-made frosting is that it can be a little too heavy, or too sweet, or too buttery. But this recipe for a whipped chocolate frosting ticks all my frosting boxes. Light and fluffy, not-to-sweet, and whipped to a fluffy, chocolaty perfection; this light-as-air frosting is what dreams are made of!

We start this recipe by making a home-made chocolate pudding! Yes, chocolate pudding.

Ingredients:

  • 1 cup granulated sugar
  • 1/3 cup birds custard powder (flour will also work in this recipe)
  • 3 tablespoons Hershey dutch cocoa powder
  • 1 1/3 cup whole milk
  • 1 cup (2 sticks) salted room temperature butter
  • 1 teaspoon vanilla
  • 1 cup semi-sweet chocolate chips

In a large bowl, mix together the sugar, custard powder (flour), cocoa powder and milk. Whisk until smooth then transfer to a small saucepan and heat until thickened. Add vanilla and cover with plastic wrap- cool completely.

In a small, clean bowl, melt the chocolate in the microwave until smooth and glossy.

In the bowl of a stand mixer, beat the butter until light and fluffy, add the cooled pudding mixture and continue to beat, finally add the melted chocolate and whip for 5 minutes until light and aerated.

For an exciting twist, add a tablespoon of orange liqueur

Pipe in a generous swirl over cupcakes and enjoy!
